Welcome to Scottish Country Recipes for the month of August.We are fast moving through the summer days now and
what a pleasant time this has been. I must admit I love this time of year and the backend feeling that comes with it.
Turning your thoughts to evenings that will become a little cooler, I thought that this month I would share with
you the recipe that I use for Lentil Soup.This soup is hearty and filling too and can be frozen if you like to make a lot
at a time...
Read on for the recipe.
125g Butter
4 large onions
4 large carrots
300g lentil
salt and pepper
Ham stock
Melt the butter in a large soup pan and add the chopped onions,saute these in the butter until soft.
Add the grated carrots and do the same with these.
Add the lentils,salt and pepper and the stock that you have.You can use ham cubes if you didnt quite get around to
boiling up the ham shank.
Cover the contents of the pan with water and bring to the boil.
Simmer the soup gently for a couple of hours and you will have a delicious bowlful of warmth and goodness...
