Scottish Shortbread
After Christmas and Hogmanay it's become almost a tradition for me to start cooking Scottish
Shortbread...this being the start of a New Year it's a time when family and friends get together to celebrate New
Beginnings...
It will keep well in an airtight container for a good few days, so it is the perfect treat to keep on hand to share with your
loved ones accompanied by a cup of tea or perhaps with a wee dram...It is very simple to make and I'm sure that you will enjoy
it...
Here we go...
Ingredients
10oz Butter
4 1/2oz Castor Sugar
7 1/2oz Plain Flour
7 1/2oz Self Raising Flour
Pinch of Salt...
This is what I do....Cream the butter and the sugar together until light and fluffy, knead in your sifted flours and salt a
little a time until you have a dough like mixture...If you keep your hands floured you will be able to work with it fine.
With a rolling pin lightly press the mixture flat until you get the thickness you would like your biscuit to be,then cut them out
using a biscuit cutter...or if you prefer...press the mixture into a shortbread mould...Bake in the oven for 20 minutes at
180f
Allow to cool and enjoy with friends.
