SCOTTISH OATCAKES...
Ingredients
1 BREAKFASTCUPFUL OF OATMEAL
1 TEASP OF MELTED FAT
1/2TEASP OF BICARBONATE OF SODA
1/4TEASP OF SALT
HOT WATER TO MIX
Mix all the dry ingredients and add the fat.....
Add sufficient water to make a stiff dough........then.......
Roll out as thin as possible......When rolling out use oatmeal and work and handle quickly.
Bake on one side on a griddle until the corners begin to curl.....now....
Toast under a grill or bake in a moderate oven.
And that's it! A really simple recipe for scrumptious Scottish Oatcakes....
The only problem you will now have, if your home is anything like mine, is keeping the bairns away from them long enough to let
them cool down...!
