Lamb Sauce - Baa !
SCOTTISH COUNTRY RECIPES:
This is a delicious sauce that is a change from mint and will not make your lamb eaters feel sheepish in the
slightest.
My sauce for lamb is made with Sorrel, a herb that you can grow in your own garden...It is very easy to grow
and takes hardly any looking after (my kind of gardening).
You will be able to source this herb from any good garden centre, it will grow very quickly and provide you with an ample crop
all summer long...It goes very well with lamb and makes a nice change from gravy...
Ok here we go...
Ingredients
120g of sorrel
60g of butter
80g of shallots
200ml of white wine
200ml of vegetable stock
400ml double cream
Wash the sorrel and remove any stalk.
Roll the leaves up tightly and shred finely.
Melt the butter in a pan and fry the shallot until soft,
then add the sorrel and sweat for just a minute.
Add the wine and stock then reduce the liquid down to 2/3 ( two thirds).
Add the cream and simmer for a couple of minutes or until thick enough to coat the back of a spoon.
Season and serve...
