SCOTTISH COUNTRY RECIPES

Halloween Tablet, will I'm sure go down a treat with all those trickers that you are going to have knocking on your door.

This is one of those traditional Scottish recipes that, growing up, I thought everyone knew. Only when my English friends told me they have never heard of it did I decide I had to share, and as the recipe is free, "Swallowing this will not be a pill".

Read on for the Ingredients and how I make it...

125g or 4 1/2lb butter

1kg or 2 1/4lb granulated sugar

300ml or 10floz of milk

200g or 7oz tin of condensed milk

1 teaspoon of Madagascan extract.

Warm up your saucepan on the stove for a couple of minutes..This pan should be of good quality and have a heavy base to avoid the tablet sticking and burning.

Put in the sugar, butter and milk and melt on a low heat until all the sugar has dissolved.

Stir in the condensed milk and bring to the boil stirring all the time. Simmer gently for 8-10 minutes or until "soft ball" stage has been reached.

If you use a sugar thermometer it should be at 115*c/240*F.

Remove from the heat and add the vanilla, beat the mixture for 5 minutes until it begins to thicken and set.

Pour into a tray bake tin and mark out into squares when it is almost cold.

This may not help your diet...but it's great fun, and when the little 'Trickers' go away you will know they may be full of sugar but at least it's home made....
