Hello and welcome to 'flipping pancakes'
These are really easy to make and I just love to make different types, and it's great fun to get the bairns involved
!
Basic mix makes 8 -10 depending on if you like them thick or thin,
* Cooking oil, vegetable or sunflower
* 2 large eggs
* 125 g plain flour
* salt (just a pinch)
* 275ml milk
* 25g of melted butter
Put the flour and salt into a large bowl, beat the eggs and milk together and then pour into the bowl.
Whisk until smooth and creamy, sieving out any lumps.
Leave for about 30 minutes and then whisk in the butter.
Heat a frying pan, non-stick if possible, having first oiled it and then pour a small amount of the batter into it. How much
depends on 'thick or thin' but I like just enough so that when I swirl the pan it covers a thin layer.
Cook until the edges start to curl up, it only takes about 30 seconds, then flip over to cook the other side.
Onto a plate then add lemon, sugar, or golden syrup to taste.
This were the fun really starts, why not try adding cinnamon, raisins, or, my favourite, banana slices and a scoop of locally
farm produced vanilla ice-cream, yum.
Don't forget pancakes are not just for Shrove Tuesday, so why not make some one day, store in the refridgerator and microwave
the next.
