Cullen Skink
Named after the town of Cullen, and skink meaning soup or stew, this is a wonderful warming meal made from haddock, potatoes
and onions.
You will need:-
Smoked Haddock
Water
1 pint of milk
1 Onion
Mashed Potato
Salt and pepper
25g butter
Then
Place skinned smoked haddock into a pan, just enough to cover it.
Bring the water to the boil and then add the chopped onion.
When cooked remove the haddock from the pan and then remove the bones, head and tail.
Take a plate and break up the fish into it.
Replace the bones into the pot and boil for one hour, strain it and bring back to the boil.
In a separate pot boil the milk and then add to the stock along with the fish.
Add the salt and boil for several minutes.
Add the mashed potato until you get a well mixed consistency.
Add the butter and pepper to taste.
A warming filling thick soup to enjoy...
