Braised Beef Pot
Economical (No jokes about Scots please), tasty, and very easy, it all goes into one big pot and cooks slowly while you get on
enjoying your day.
Ingredients:
1 3/4lb / 875g piece of rolled and tied brisket of beef
2 onions, peeled and cut roughly into wedges
2 carrots, peeled, cut into large chunks and halved lengthways
2 parsnips, peeled, cut into large chunks and halved lengthways
1 bay leaf
Thyme and parsley sprigs
2 tbsp sunflower oil
1 1/4 pts / 759ml beef stock
Then:
Preheat the oven to 180 degrees c Gas 4
Heat the oil in a large pot or casserole dish and fry the beef until just browned on all sides, at the same time heat the stock
in another pan.
Add the onions, thyme, parsley, bay leaf and hot stock and bring to the boil. Cover and put in the oven for one
hour.
Then add carots and parsnips returning the pot to the oven for another hour making the beef nicely browned and
tender
When ready remove the beef and carve nice thick slices
Serve with mashed potatoes and greens
This takes about 2 and half hours and serves 4..
