Bacon and Potato Broup

This is a great warmer and ideal for taking on walks and hunts in a hot food flask. Why is it called broup...well as you will see it's not really broth or soup....

You will need:-

4 rashers of chopped lean back bacon

12oz / 375g floury potatoes, peeled and diced

6 floz / 175ml chicken stock

1 peeled, diced onion

10fl / 300ml semi skimmed milk

1/2 oz / 15g butter

5oz / 150g sweetcorn ( I use frozen)

1 tbsp chopped parsley

Then:-

In a medium pan heat the butter and fry the bacon and onion for approx 5 mins until the onion is soft.

Add potato and stock, bring to boil and simmer for approx 15 mins until the potatoes are tender.

Add sweetcorn and milk, bringing it back to boil for a minute or 2.

Stir in the parsley, pack into your hot food flask and off you go....
