Atholl Brose
I thought you might like to make a truly Scottish liquer...Atholl Brose...ideal for Christmas,
Hogmanay...anytime...
It's delicious just with ice or with mixers like ginger beer, or lemonade. I'm told if you have a really
sweet tooth if braw with 'Irn Bru' but I must admit I've never tried that one !
It can be drunk straight away but if you can be patient and leave it to mature for a week it tastes even
better. Here we go...
Ingredients
One good size bottle of whisky ( this can be supermarket 'own brand Scotch' or for a real treat try a
single malt )
10 fluid ounces of double cream
450g of clear Scottish honey ( I'm really lucky as we have wonderful estate honey which is really good for this )
Six large eggs whites
One handful of fine ground oatmeal
Directions
1. Put the oatmeal into a bowl and pour the whisky over it soaking it thoroughly.
2. In another bowl beat the egg whites until stiff, and then fold the cream into
the mixture.
3. Add the honey, and then slowly blend in the whisky and oatmeal mixture.
4. Pour into preserving jars, or any containers with lids, and put aside for one week, remembering
to shoogle the mixture once a day, when ready decant by straining the liquid through a fine sieve . Now enjoy.
